Raaka's Chocolate Library Gift Box

When we visited Raaka Chocolate in February we came home with their beautiful Chocolate Library Gift Box. We picked the bars we wanted while we were there, but if you were to order it for yourself the box would contain seven bars from their current collection and a limited batch bar.

Stamped in beautiful gold foil lettering, the inside of the box states. "At Raaka, we make chocolate from scratch without roasting so you can taste the wild complexity of cacao in every bite. This collection showcases the variety of cacao beans we work with and the unconventional methods we use to bring out their flavors. We hope you can taste the love and care put into every batch." During our visit there we could definitely feel the love.

Also contained inside is a stunning sixteen-page book about their sourcing and chocolate-making process.

When talking with William about the process it took to create this box, he described how it needed to fit eight bars but not take up too much space on the shelf while also fitting snug into their paper bags. The booklet that he designed had to be exactly four bars wide and one bar tall... not typical! We think the book came out really nice and plan to keep it forever.

There are many excerpts from it that I loved reading, including this one: "Cacao fruits have between twenty and sixty seeds. These seeds are removed, packed up, and brought to the fermentery to begin the post-harvest process. It takes about twenty-eight seeds to make one of our 71% Pink Sea Salt bars."
